I have a bunch of chicken breast that I need to use up, so I decided to come up with a new marinade with what I had in the pantry and refrigerator (I did buy the limes for this recipe).  From what I randomly came up with this is a very good recipe.

Ingredients:

  • 4 C Orange Juice
  • 2 Limes - Juiced and 1 T Zest
  • 1/2 C Honey
  • 5 Chipotles in Adobo diced from a can with drippings from Adobo Sauce (don't rinse)
  • 1/2 C Low Sodium Soy Sauce
  • 1 T Ground Cumin
  • 8 - 10 Chicken Breasts

Instructions:

  1. Combine Orange Juice, Juice of Limes and Zest, Honey, 3 diced Chipotles in Adobo, Low Sodium Soy Sauce, and Ground Cumin and mix very well
  2. Place Chicken Breast in a shallow dish or plastic bag
  3. Pour Marinade in plastic bag
  4. Refrigerate 4 hours to overnight
  5. Drain marinade from chicken into sauce pan
  6. Add remaining dice chipotles to the marinade
  7. Heat to boiling and then simmer and reduce for 20 minutes
  8. Grill chicken over medium heat
  9. Baste with reduced marinade last 5 of grilling

Results:

This marinade really was outstanding and full of flavor.  I used some fairly cheap chicken breasts that came frozen in a bag, would have been even more excellent with fresh chicken.  Next time I do this, I will add a little more spicyness and use chicken wings.
