I have a bunch of chicken breast that I need to use up, so I decided to come up with a new marinade with what I had in the pantry and refrigerator (I did buy the limes for this recipe). From what I randomly came up with this is a very good recipe.
Ingredients:
- 4 C Orange Juice
- 2 Limes - Juiced and 1 T Zest
- 1/2 C Honey
- 5 Chipotles in Adobo diced from a can with drippings from Adobo Sauce (don't rinse)
- 1/2 C Low Sodium Soy Sauce
- 1 T Ground Cumin
- 8 - 10 Chicken Breasts
Instructions:
- Combine Orange Juice, Juice of Limes and Zest, Honey, 3 diced Chipotles in Adobo, Low Sodium Soy Sauce, and Ground Cumin and mix very well
- Place Chicken Breast in a shallow dish or plastic bag
- Pour Marinade in plastic bag
- Refrigerate 4 hours to overnight
- Drain marinade from chicken into sauce pan
- Add remaining dice chipotles to the marinade
- Heat to boiling and then simmer and reduce for 20 minutes
- Grill chicken over medium heat
- Baste with reduced marinade last 5 of grilling
Results:
This marinade really was outstanding and full of flavor. I used some fairly cheap chicken breasts that came frozen in a bag, would have been even more excellent with fresh chicken. Next time I do this, I will add a little more spicyness and use chicken wings.
