corn Welcome to the my new Sunday feature, Side Dish Sunday, where I am going to be focusing on some of my favorite side dishes to go with BBQ.  This was suppose to go up yesterday, but ran out of time.  This week's dish is Escalloped Corn, a family favorite and very simple to make.

Ingredients:

  • 1 can cream style corn
  • 1 can whole kernel corn
  • 1 stick melted butter
  • 2 beaten eggs
  • 1 box Jiffy corn muffin mix
  • 1 cup Sour Cream
  • Chopped Onion (optional)

Instructions:

Preheat oven to 350 degrees.  Mix all ingredients in a bowl and pour into a 13 x 9 baking dish and bake for about 1 hour.
