My boss at work found these cookies for me from the local newspaper. The original source of these cookies are from William Mueller, Babblin' Babs Bistro. The recipe calls for mostly organic ingredients, but I just used non-organic ingredients. Cookies with bacon sounds kind of strange, but these cookies were amazing. These cookies are outstanding, the bacon is more lake bacon candy.
The is a two part recipe, the first part is to make Praline of Bacon.
Ingredients:
- 1 teaspoon of sugar
- 2 teaspoons Worcestershire sauce
- 1 tablespoon butter, melted
- 1/8 teaspoon red pepper
- 1 teaspoon cinnamon
- 1/2 pound cooked and diced bacon
Preheat the bacon to 325 degrees. Spray a sheet pan with cooking spray. In a mixing bowl, add the sugar, Worcestershire sauce, butter, red pepper, and cinnamon. Whisk well. Pour mixture on sheet pan and toss cooked bacon in to mixture and evenly coat. Bake, turning every 5 minutes, for 20 to 25 minutes total. Remove from the oven and let cool. This is enough to make two batches of the cookies.

Ingredients:
- 1/2 cup organic butter
- 1/2 cup organic peanut butter
- 1 whole organic egg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon organic vanilla extract
- 1 1/4 cups organic flour
- 1/4 cup organic banana chips, crushed
- 1/4 cup Praline of Bacon
Preheat the oven to 375 degrees. In a large bowl, beat butter, peanut butter, and egg with a mixer. Add sugar, brown sugar, baking powder, baking soda, and vanilla. Mix until all is incorporated and continue to scrape the sides. Slowly, at a low speed, add flour until it is incorporated into the dough. Finish your cookies with banana chips and praline of bacon (you can use more or less), and mix in the dough. Make 1-inch balls with dough or larger if desired. Place on a baking sheet with parchment paper 2 inches apart. Flatten with palm of your hand. Bake at 375 degrees oven for 7 to 9 minutes or until bottoms are browned.
